When exchange students arrive in Spain, they often have the same surprise: dinner is at nine or ten at night! The meal schedule in Spain is different from the schedule in the United States, and it's part of a way of life.

The day begins with a light breakfast: coffee with milk, bread with tomato and olive oil, or some cookies. Mid-morning, many students eat a sandwich at recess. The main meal is between two and three in the afternoon. It has several courses: first a soup, legumes or a salad; second, fish or meat with vegetables; and for dessert, seasonal fruit. In the afternoon children have a snack, and dinner, lighter, comes at night.

This way of eating is part of the Mediterranean diet. In 2010 UNESCO declared it part of the intangible cultural heritage of humanity. Why? Because it's not just a list of foods. It includes markets, grandparents' recipes, local agriculture and, above all, the custom of eating together.

That's why Spaniards highly value the «sobremesa»: after eating, the family stays at the table to talk, tell stories and laugh. Nobody is in a hurry.

Do you want to eat a little more «the Spanish way»? Follow this advice: cook with olive oil, eat legumes several times a week, choose seasonal fruit and vegetables, turn off the TV during the meal and, above all, sit at the table with your family or friends and enjoy your food without hurrying.
